Recipe: Lemon Squares with Olive Oil & Sea Salt
Marilyn, in our office loves to spoil us with delicious baked goods, and we do not complain! She recently brought in these incredibly delicious so we had to ask her to share the recipe. Lemon Squares taste great usually, but there is something about the use of olive oil with just a touch of sea salt that really makes these extra special.
Lemon Squares
Lemon Squares Crust:
1 c. butter, melted
1 c. confectioners sugar
2 c. flour
Topping:
4 eggs
2 c. granulated sugar
4 Tbsp. flour
6 Tbsp. lemon juice
1/8 tsp. olive oil
1 tsp. baking powder
Icing (Optional):
¼ c. butter
1 c. confectioners sugar
1 ½ Tbsp. lemon juice
Lemon Squares Directions: Mix butter, confectioners sugar, and 2 c. flour into a dough. Pat into 11 x 13-in. pan. Bake at 350°F for 20 min.
Topping Directions: While crust is baking, mix eggs, granulated sugar, 4 Tbsp. flour, lemon juice, olive oil, and baking powder. Pour over baked crust. Bake at 350 degrees for 30 min.
Icing Directions: Combine butter, confectioners sugar, and lemon juice. Drizzle on lemon squares.
Instead of icing sprinkle lemon squares with confectioners sugar & lightly with sprinkle sea salt.
